SHRIMP CHOWDER

Ingredients:

  • 1-lb cooked shrimp cut in pieces
  • 1-lb velveeta cheese
  • 4-med onions, fine chopped
  • 4-med potatoes, cubed small
  • 1-qt whole milk or heavy cream
  • 4-TBS butter
  • 1-C water

PREP:

Saute Onions in butter till translucent. Add potatoes and water, cook untill potatoes are tender. In separate sauce pan melt cheese in the milk over med to low heat (do not scorch) add to onion potato mixture. Add shrimp.

You may also add some chopped chives (in place of one of the whole onions) for color and taste Add parsley and add salt and pepper to taste. Cook over low heat an additional 5 mins to blend flavors (do not allow to boil after adding shrimp as it will curdle)

Serve hot with drink and crackers of choice..
